Gourmet, contemporary

With his own subtle version of fusion cooking, the Basque chef William Girard draws on his experience at Al Mahara's Burj Al-Arab in Dubai to build dishes inspired by contemporary art. How about a dish of Kandinsky? Right away. This sort of art is ephemeral and one can only appreciate it by eating it. As espelette pepper and Japanese yuzu (citrus) seem to satisfy the extremely popular demand for hybrid food, one can enjoy snails draped in spinach (two green dots on a pink foam of radishes), scallop sashimi on avocado foam (concentric circles), grilled mackerel with eggplant puree (lots of dots), and tender lamb accompanied by a crispy Cantonese spring roll filled with Basque ratatouille. But real foodies- lunching business people who like the modern decor designed by AB Design Studio and, in the evening, young gourmets who come here rather than the clusters of globes-will opt for the fine, light Granny Smith tart.
